Pub and Duck Tacos
I know. I know. I live in Athens. The bar has been open for over a year, and your Beer Wench has not written about them. When Trappeze opened in December, 2007, they started with a phenomenal range of draft beer as well as a bottle selection that must be seen to be believed. What they did not have at the time was food. I specialize in beer and food pairings. Not only do they now have food, but they also expanded into the space next door. Yes, that means more taps. Since exploding onto the beer scene in Athens, Trappeze has become one of the go-to places for beer dinners and offers a great menu for lunch and dinner on a daily basis. I have seen their kitchen. It's itty bitty. The food that comes out of it is divine. Their regular offerings include a mushroom soup made with Chimay, a roast beef sandwich that, apparently, is a carnivore's delight, hummus, vegetarian and regular reubens and the list goes on. It is Eric Johnson's, owner, personal passion as a beer lover to bring a wide range of the best that brewers of the world have to offer to our little corner of Georgia. Greg Laclaire, executive chef, puts his creative juices, herbs, and spices to work with each beer dinner, having created pairings for Terrapin, Left Hand, Stone, Unibroue, and Chimay to name a few. From the dinners and Greg's imagination come new menu items fairly regularly. The latest dish that folks are raving about is our recipe for this article. BBQ Duck Taco: 8 duck legs with thighs 4 clove garlic (chopped) 1 yellow onion (sliced) 6 sprigs Thyme 3 TBSP Kosher Salt 4 cups Chicken stock preparing the Duck: Lay Duck (skin side down) in baking dish. Sprinkle with salt, cover the duck with garlic, onions, thyme, carrots, and celery. Cover and refrigerate overnight. Preheat oven to 225 degrees and bake for 3-4 hours (until Duck is tender and easily falls off the bone). Set aside to cool then pull meat off the bone. BBQ Sauce: 3 cups Ketchup 1 onion (minced) 1 1/2 cups water 5 TBSP Worchestershire 1/2 cup white vinegar 6 TBSP Brown Sugar 1 TBSP Dry Mustard 1 TBSP Kosher Salt Combine all ingredients in mixing bowl. Serve Tacos in a tortillia with shaved cabbage on bottom and BBQ Duck on top with sauce. Duck Tacos are rich and earthy and pair especially well with citrusy hoppy beers like Terrapin Rye Squared. It also pairs well with viniferous beers like Duchesse De Bourgogne. So give this luscious duck fare a try in your own kitchen and then come on over to downtown Athens, Georgia and give the originals a try or else be adventurous and sample other fare from the menu with plenty of beer to drink it down.
