Wake Up Chubby Beeramisu

      The second annual Terrapin Wake ‘n Bake Off was held on January 20th at Aromas in Athens, Georgia. This contest features three beers and challenges participants to create a delectable dessert with beer. Terrapin’s Coffee Oatmeal Imperial Stout was featured along with Old Chub from Oskar Blues and Atlanta Brewing Company’s Double Chocolate Oatmeal Stout. Participants were given points based on use of beer, flavor, and presentation. Although some contestants used beers other than those featured, more points were given to recipes with the above beers.

      The winning recipe this year went to Southern Brew News’ own Larry Johnson with his beeramisu using Terrapin’s Wake ‘n Bake Stout and Oskar Blues’ Old Chub. Original presentation went a long way in helping this recipe win. Larry served up his chocolate and coffee lusciousness in two oversized Hoogarden glasses. Credit for the presentation is given to Larry’s long time email pen pal Jen Meyer’s.

      The Recipe

Wake Up Chubby Beeramisu

4 ounces bittersweet chocolate 
3 large egg yolks 
3 tablespoons granulated sugar, plus 2 tablespoons sugar, plus 1 teaspoon 
½ cup and ¼ cup Wake ‘n Bake Coffee Oatmeal Stout 
2 large egg whites 
8 oz. mascarpone cheese 
1 cup heavy cream

1 can Old Chub Scottish Ale
4 to 5 ounces ladyfingers 


Place the chocolate in the top of a double boiler or in a bowl set over a pot of simmering water, and stir until melted. Remove from the heat and cool to room temperature.

In the top of a double boiler or in a bowl set over a pot of simmering water, beat the egg yolks and 3 tablespoons of sugar until pale yellow and frothy. Add the ½ cup of Wake ‘n Bake and whip until thick, being careful not to let the mixture boil. Remove from the heat and fold in the chocolate. Cool to room temperature.

In a medium bowl, beat the egg whites until stiff peaks form, and fold into the cooled custard mixture.

In a bowl, combine the ¼ cup of Wake ‘n Bake, the mascarpone, and 2 tablespoons sugar and set aside.

In a separate bowl, whip the cream until soft peaks form. Add the remaining teaspoon of sugar and whip until stiff peaks form.

Pour some of the Old Chub into a shallow bowl. Dip the ladyfingers into the Old Chub and arrange them in the bottom of a square 9-inch baking dish. Cover with half of the mascarpone mixture, half of the custard, and half of the whipped cream. Repeat with the remaining ingredients, ending with whipped cream on top. Cover with plastic wrap and refrigerate until set, at least 3 hours.

While the tiramisu is chilling, drink any remaining Wake ‘n Bake and Old Chub.
